Dear Abby’s Tangy Lemon Squares

1 cup all-purpose flour
1/2 cup butter (1 cube), softened
1/4 cup powdered sugar
2 eggs, well-beaten
1 cup granulated sugar
2 tablespoons all-purpose flour
Grated peel of 1 lemon
2 tablespoons lemon juice
1/2 teaspoon baking powder

Preheat oven to 350ºF.

Lightly grease the sides only of 8-inch square baking dish. In medium bowl, beat together 1 cup flour, butter and powdered sugar. (Mixture will be fine “crumbs”.) Pat onto bottom of prepared baking dish and bake for 20 minutes.

Meanwhile, in large bowl, with electric mxier, combine eggs, granulated sugar, 2 tablespoons flour, lemon peel, lemon juice and baking powder. Pour lemon mixture over the cooked base; bake for 25 minutes longer.

Cool before cutting into diamonds or squares.
