Diabetic Friendly Peanut Butter Cookies

Ingredients:
1/2 cup Peanut Butter, chunky , at room temperature
1/3 cup margarine , at room temperature
1/4 cup Molasses, dark
2 tsp Sweetener, saccharin, liquid
3 egg whites , at room temperature
1 1/4 cup white all purpose flour
1/2 tsp baking soda
1/8 tsp salt

Directions:
1 Preheat oven to 375 degrees F and spray a cookie sheet with cooking spray.
2 Mix peanut butter, margarine, molasses, and sugar substitute at medium speed until smooth.
3 Add egg whites and continue mixing.
4 Add flour, soda, and salt, and mix at a medium speed until smooth.
5 Drop onto cookie sheet by the tablespoonfuls.
6 Dip a spoon in cold water and the press back of the spoon into the dough to make a circular imprint.
7 Bake for 10-12 minutes.
8 Take cookies out of the oven and cool on a rack.
