Diet-Lovers Potato “Cream Cheese” Casserole
3 Medium Potatoes; cooked & mashed with skim milk
3-1/2 Ounce Neufchatel cheese
1 Egg; lightly beaten
2 Tablespoons Onion; chopped
1 Tablespoon Parsley; chopped
Combine mashed potatoes and cheese, beating until well blended. Stir in egg, onion and parsley. Spoon into well-greased 1 quart casserole dish. Sprinkle with paprika. Bake at 400°for 30 minutes or until heated through.
Makes 8 servings, about 80 calories each.
