Dinner in a Skillet
1 box jiffy corn bread mix 1 can beef stew 2 T. shortening or bacon drippings
Heat oven to 375 degrees. Place bacon drippings in bottom of 10 inch skillet and heat. Prepare cornbread according to pkg. directions. Pour into hot greased skillet and pour beef stew in the middle. Crust will cook over the top of stew. Bake 25 minutes or until cornbread is done.
Very easy southern potpie. Ypu can vary according to your taste. A friend of mine makes it using mexican cornbread mix over 2 cans of Campbell’s steak and potato soup. If you don’t have the jifffy mix just make up regular cornbread recipe for 10 inch skillet.
