Double Buttercups - Peanut Butter Cup Cookies
2nd place winner of the
1968 Pillsbury Cook-off
2 sticks Pillsbury pie crust mix, crumbled
1 can (3-oz) chow mein noodles, crushed
1/3 cup brown sugar
1/4 cup peanut butter
1 beaten egg
2 teaspoons water
1/2 teaspoon vanilla
1 (11 oz pkg) (40 candies) bite size chocolate covered peanut butter cups (Reese’)
Combine pie crust mix, noodles, and brown sugar;
thoroughly blend in peanut butter, egg, water and vanilla.
Shape into 1 inch balls. Place on ungreased cookie sheet.
Make a large depression in center of each cookie.
Bake in 375 degree F oven for 8 minutes.
Press a candy in each center. Bake 2 or 3 minutes more.
Remove. Cool 5 minutes. Yield 40 cookies.
