Double-Chocolate Banana Muffins
1/2 cup butter, softened
1 cup sugar
2 eggs
3 ripe bananas, mashed
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
2 tablespoons unsweetened cocoa powder
1/2 cup sour cream
1 cup semisweet chocolate chips
Preheat oven to 350 degrees. Spray 24 muffin cups with nonstick coating spray or line with paper cups. In a large bowl, cream together the butter, sugar and eggs. Stir in bananas and vanilla. Sift in flour, baking soda and cocoa. Mix well. Blend in sour cream and chocolate chips. Spoon batter into muffin cups, filling 2/3 full. Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
Makes 24 muffins.
