Easy Cheesy Tortilla Skillet
1 Tb Vegetable Oil
2 C Tortilla chips, broken
1 C Chunky Salsa
4 ea Eggs, beaten
2/3 C Cheddar cheese, shredded
In a skillet, heat oil over medium heat and add the chips and saute them in the hot oil for 1 inute. Add the salsa and stir to combine with the chips, some of the mixture should be absorbed into the chips. Top this with the eggs. Cook, stirring gently until the eggs are set and the mixture is sort of dry. This should take about 5 to 7 minutes. Top with cheese and serve hot.
