Easy Creamy Meatball and Rice Casserole

1 (12 oz.) package Mama Lucia’s or any other Frozen Meatballs
1 cup white rice
1 medium onion, chopped
2 cloves garlic, chopped
1 tablespoon olive oil or butter
1 can beef broth
1 can cream mushroom soup
1/3 cup milk
1 cup finely shredded mozzarella cheese

Preheat oven to 375 degrees.

In a small sauce pan, saute onions & garlic in oil/butter. Add beef broth and bring to a slow boil. Add soup and milk, stirring to blend. Bring to a slow boil. Pour rice onto bottom of a medium sized casserole dish (with tight lid,) add hot liquid to rice and stir to blend. Add meatballs and stir slightly. Cover tightly and bake for 35 minutes. Remove from oven and add cheese. Cover again until cheese is melted through. If you do not have a lid, cover with foil.

This recipe was good, the measurements of the ingredients were not detailed enough. For example, What size cans? I guessed about the measurements and my rice was mushy. And my fiance said it was missing something.

I’m not sure what you mean about the measurements. The can of soup should be the regular size can of mushroom soup and same with the broth. Sorry to hear the recipe didn’t come out right for you. Not sure what could have happened. I have made this recipe before…I’m really sorry it didn’t work out.
