Easy Lemon Cheesecake

1 ready-to-use graham cracker crust
2 (8 ounce) packages cream cheese, softened
1/2 cup granulated sugar
2 eggs at room temperature
1 tablespoon lemon juice
1/2 teaspoon grated lemon peel
1/2 teaspoon vanilla

Preheat oven to 350 degrees. With electric mixer on medium speed, mix the cream cheese, sugar , juice and peel until well blended. Add the eggs one at a time and blend well after each addition.

Pour the mixture into the crust and bake at 350 degrees for 40 minutes or until the center is almost set. Cool to room temperature and then refrigerate for 4 hours before serving.

Serves 8.
