Easy peaches ‘n’ cream cups


2 – 6 oz. containers peach yogurt
1/2 cup Cream Cheese, Softened
1/2 cup sliced Peaches, drained and chopped
1/2 t vanilla extract
1/2 t ground ginger
1/2 cup crushed gingersnap cookies

Combine cookie crumbs and ginger, set aside. In a mixing bowl, beat the yogurt, cream cheese and vanilla until smooth. Fold in the chopped peaches.

Spoon the mixture into 4 custard ramekin dishes. Sprinkle the top with cookie mixture and refrigerate overnight.
