Egg Nog Nanimo Bars

Egg Nog Nanimo Bars

These bars are made with plenty of chocolate and a homemade eggnog filling. These will make a great addition to your holiday platter.

Crust:
1/2 cup unsalted butter
2 ounces semi-sweet chocolate
2 tablespoons sugar
1 large egg, lightly beaten
1 teaspoon vanilla extract
2 1/2 cups graham cracker crumbs
1 cup flaked coconut

Eggnog Filling:
1/4 cup unsalted butter, softened
3 tablespoons milk
1 tablespoon rum or brandy (or 1/2 teaspoon rum or brandy extract)
2-1/2 tablespoons instant vanilla pudding mix powder
1/4 teaspoon ground nutmeg
2 cups powdered sugar
White Chocolate Glaze:
4 ounces chopped white chocolate or white chocolate chips
2 teaspoons unsalted butter

Spray 9-inch square baking pan with non-stick cooking spray. For Crust: Combine butter and chocolate in medium saucepan over low heat. Cook, stirring just until melted. Remove from heat. Stir in sugar, egg and vanilla until blended. Add graham cracker crumbs and coconut, mix well. Press evenly into prepared pan and chill. For Filling: Beat together butter, milk, rum (or brandy), pudding mix, nutmeg and powdered sugar in medium bowl until smooth. Spread evenly over crust. Chill 20 minutes. For Glaze: Melt white chocolate and butter over top of double boiler, set over simmering, not boiling water, stirring until smooth. Spread evenly over filling. Chill until glaze sets. Cut into bars.
