Enlightened Chocolate Pudding

1/4cup unsweetened cocoa powder
2 tablespoons cornstarch
1 1/2cups reduced-fat or 2% milk
6 to 8 packets sugar substitute or equivalent of 1/3 cup sugar
1 teaspoon vanilla1/8 teaspoon cinnamon, grind, optional
Assorted sugar-free candies, optional

bCOOKING INSTRUCTIONS:[/b]

  1. In a microwaveable bowl or 1-quart glass mixture, combine the cocoa powder and cornstarch.
  2. Slowly pour on milk, stir until well blended.
  3. Place the mixture in the microwave on HIGH for 2 minutes. Mix well after 2 minutes.
  4. Microwave again for another 3 to 4 1/2 minutes on MEDIUM TO HIGH.
  5. Stir the mixture every 1 1/1 minutes or until the mixture thickens.
  6. Mix sugar substitute, vanilla and cinnamon to taste, if desired.
  7. Let the pudding cool for at least 5 minutes. May be served warm or cold.
  8. Candies can be used as garnishing.
