1/2 cup brown sugar
3/4 cup rolled oats
1/2 cup whole wheat flour
1/4 cup pecans or almonds, chopped
1/4 cup raisins
1/2 tsp baking powder
1/4 cup coconut
1/4 cup chocolate chips
1/4 cup sunflower seeds
1/4 cup butter or margarine
1 tsp vanilla extract
Preheat oven to 160Â°C / 325Â°F.
In a large bowl mix together all dry ingredients until well blended.
In separate bowl mix together egg, butter, and vanilla until well blended.
Mix all ingredients together until smooth (do not over mix). If mixture is too dry you may add more butter accordingly.
Drop spoonfuls (about 15 mL / 1 tbsp.) of dough onto cookie sheet about 5 cm / 2â€ apart.
Bake for 20 to 25 minutes or until browned. Remove cookies and place on cooling rack immediately.
Makes approximately 16 cookies.
