Fancy Mashed Potato Casserole
5-6 potatoes
3/4 to 1 stick butter
8 oz. sour cream
8 oz. cream cheese
1/4-1/2 cup onions, finely chopped (optional)
1/2 cup milk or cream, or little more as needed to make creamy
salt and pepper to taste
1 lb. grated cheddar cheese
Cook and cream potatoes, using butter, milk, salt, and pepper. Then add sour cream, softened cream cheese, onions (if desired), and about 1/3 of shredded cheddar cheese. Bake in oven at 325 degrees about 30 minutes until bubbly. Remove from oven and top with rest of shredded cheddar cheese. Return to oven until cheese melts. May add cooked, crumbled bacon if desired.
