"Far East" Quesadilla

“Far East” Quesadilla

3 Spinach flavored tortillas
1 cup Hoisin Barbeque sauce (recipe to follow)
1 cup sauteed mushrooms
1 cup cooked, drained spinach
1 cup julieened roasted red peppers
chicken or tofu optional
sesame seeds
chopped scallions

  • for the hoisin sauce, you can simply combine your favorite store bought barbeque sauce and Hoisin sauce (found in the Asian specialty section of your supermarket) at a rate of 1:1. Flavor with a touch of soy sauce, sesame oil and brown sugar.


lay two tortillas side by side…spread an even layer of the barbeque sauce on both. Top both tortillas with a blend of the vegetables as well as Chicken or tofu. sprinkle sesame seeds over all, stack the tortillas and top with the remaining tortilla. Cook as with Spicy Chicken Quesadilla, and serve garnished with more barbeque sauce & chopped scallion.
