Farmer’s Market Cupcakes
Ingredients
1 cup finely chopped carrots
1 cup finely chopped broccoli
1 cup finely chopped cauliflower
2 1/2 cup all purpose flour
2 cups granulated sugar
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
4 large eggs
1 1/4 cup vegetable oil
2 tsp vanilla extract
8 ounces chopped pineapple chunks, not drained
1 cup coarsely chopped walnuts
Preparation
Combine grated carrots, cauliflower, broccoli, flour, sugar, baking soda, baking powder, salt and cinnamon.
Stir in eggs, oil, vanilla, pineapple, and walnuts.
Bake at 325-F for 18-26 minutes depending on size of cupcakes.
To make the Farmers Market Spiced Cream Cheese Frosting:
Ingredients
1 lbs of cream cheese
1/4 lb unsalted butter
5 cup powdered sugar
1 1/2 tsp vanilla extract
1/4 tsp all spice
Preparation
Soften butter just a little, then put in mixer bowl.
Add cream cheese in pieces (do not soften in microwave), and cream butter and cream cheese.
Add vanilla. Gradually add in the powdered sugar one cup at a time.
Add in all spice. Beat until smooth.
