Fish Fry

Had some fish I caught a few weeks back up in the Channel Islands. So decided it was time to fry some of it up.

the fillets cut up into strips

breading for the fish. this is the New Orleans brand you can find in most markets

coated in the breading waiting to bathed in oil

becoming golden brown and placed on plate.

all done and ready to eat as tacos, fish sandwiches or just by itself.

Method

Mint chutney:

  1. Grind all ingredients together.

For the fish:

  1. Combine and mix all ingredients for marinade in a bowl.
  2. Add fish fillets, coat well with the marinade.
  3. Leave the fish to marinade for 30 mins. or 1 hour.
  4. Dip the fish in cornflour and plain flour batter and then coat the fish with fresh cornflakes.
  5. Deep fry in hot oil.
  6. Serve hot with extra mint chutney mixed in yoghurt.
