Flaky 4-Ingredient Honey Mustard Chicken
1/2 cup dry-roasted or honey-roasted peanuts
3/4 cup cereal
4 chicken breast halves, skinned and boned
1/2 cup honey mustard plus additional for serving
Preheat oven to 400°F.
Place the peanuts in a food processor and pulse until finely chopped. Add the cereal; pulse until the mixture resembles crumbs. Transfer to a piece of waxed paper.
Coat each chicken breast with the honey mustard and then roll in the crumb mixture, coating well. Place in a greased shallow baking dish; bake for 20 to 25 minutes, or until cooked through, turning once. Serve with additional honey mustard.
