Fluffy Tapioca (Microwave)

1 egg, separated
1/3 cup sugar
1/8 tsp salt
3 Tbsp minute tapioca
1 tsp vanilla

Beat egg whites until foamy, add 2 Tbsp sugar and beat until soft peaks form; set aside. Mix egg yolk, remainder of sugar, salt, tapioca and milk in a 2 quart microwave safe dish. Cover and cook for 7-9 minutes on igh (700 watt oven) or until mixture thickens, stirring occasionally. Very slowly fold hot mixture into beaten egg white. Add vanilla, blend lightly, cool and enjoy.
