Four Cheese Potato Stuffed Mushrooms

1(4-ounce pouch) of Idahoan Four Cheese Mashed Potatoes
12-18 large mushrooms
3 Tbs butter, margarine or olive oil
3 Tbs chopped chives
1/2 tsp salt

Oven set at 450. Chop the mushroom stems and set aside.

Use a mellon baller to scoop out some additional flesh from the mushroom.

Melt the butter and add all chopped mushroom pieces. Cook for about 3
minutes.

Remove from the heat and add the mashed potatoes and 2 Tbs of the chives. Add the salt if needed.

Fill each cap with the mashed potato mixture and sprinkle each one with the
remaining chopped chives.

Bake for about 10 minutes,

Stuff the larger Bellas with this mixture.
