Franks and Cabbage

Another good dinner choice.

4 cups coarsely shredded cabbage
4 or 5 franks, cut into 1-in. pieces
2 Tbsp. butter
2 Tbsp. all-purpose flour
1 cup milk
1 Tbsp. prepared stone ground mustard or regular

Preheat oven at 350*F.

Cook cabbage, covered in small amount of salted boiling water 5 to 6 minutes or until barely tender, drain. Place in shallow 1 quart baking dish. Arrange franks on top. Melt butter, blend in flour and 1/2 tsp. salt. Add milk all at once, cook and stir till sauce is thick and bubbly. Cook 1 minute longer. Stir in mustard. Pour sauce over franks, bake for 20 to 25 minutes.
