I buy celery and use one or two stalks, and the rest stays in the vegetable bin in the fridge and rots. So I decided to freeze the remainder and see if I could use it. I found out if you take it from the freezer and cut it while frozen it tastes the same as fresh.
The same applies for red bell pepper and carrots. I also freeze the garlic to retain the flavor. When cooking a little trial and error (or guess and go) usually works out for the best especially if you have experience.
