French Onion Soup

This homey soup gets a healthy update, and you won’t have to give up the bread or the sticky cheese.

Serving Size: 1 cup

Ingredients:

large onion, sliced - 3
low-calorie margarine - 2 tbsp
sugar - 1/4 tsp
all-purpose flour - 1 tbsp
white wine - 1/4 cup
low-fat, low-sodium chicken broth - 10 oz
low-fat, low-sodium beef broth - 10 oz
water - 1 1/2 cups
French bread, toasted - 5 slices
shredded light Swiss - 4 oz
grated Parmesan cheese - 1/4 cup

  1. Combine the onions and margarine in a 3-qt. casserole. Cover.

  2. Microwave 6 to 9 minutes on High until the onions are soft and translucent.

  3. Stir in sugar, flour, wine, broth, and water. Cover, microwave 4 to 6 minutes on High or until heated through.

  4. Ladle soup into individual casseroles. Top with bread slices. Sprinkle with cheeses. Microwave 5 to 7 minutes on Medium-High (70 percent power) or until cheeses melt.
