Fresh Peas With Tarragon
Fresh is always best, but you can use frozen and thawed peas in this recipe if you need to.

Serving Size: 1/2 cup
Ingredients:
peas - 3 cups
tarragon vinegar - 1 tbsp
butter - 2 tsp
pearl onions - 1/2 cup
low-fat, low-sodium chicken broth - 1/2 cup
minced fresh tarragon - 1/4 tsp
- Combine all ingredients except tarragon in a saucepan and cook over medium heat until peas and onions are tender, about 5-8 minutes. (Allow a little more cooking time if you are using fresh shelled peas.) Add the tarragon, toss lightly, and serve.
