I take a skillet w/matching lid, line the pan w/foil, place chicken pieces fat side up, season, cut up washed and unpeeled potatoes, place on top and cover that w/onions and mushroomsm, season to your taste.
Put in oven 350 for 2 hrs. Served w/salad and corn muffins.
For Friday its a quick meal, I get it ready before I leave for gym and work and hubby puts in oven when he gets home, its done when I get home, I can clean up fast and put my feet up for the nite.
