Fried Green Bean Appetizer

Here’s an Asparagus appetizer recipe very similar to the green bean one:


2 lbs Asparagus
1 ½ cups fresh breadcrumbs
2 eggs (beaten)
1 dash Tabasco sauce
2 tablespoons olive oil
1 ½ cup Parmesan cheese (grated)
½ teaspoon salt
2 tablespoons butter
extra grated Parmesan cheese

Parboil Asparagus for 4 minutes, drain.
On a plate mix together the cheese and bread crumbs.
In a shallow bowl place beaten eggs, dip Asparagus in egg and then breadcrumbs, coating well.
Chill for 20 minutes
In a skillet heat the oil and butter.
Sauté Asparagus a few stalks at a time, add more butter and oil if needed.
Place Asparagus on a heated platter, sprinkle with parmesan cheese and place under the grill until cheese melts.
Serves 6
