Frosted Orange Gelatin Desert Salad
1 6 ounce package orange gelatin mix
2 1/2 cups boiling water
2 11 ounce cans mandarin oranges, drained
1 8 ounce can crushed pineapple with juice
1 6 ounce can frozen orange juice concentrate, thawed
1 3 ounce package instant vanilla pudding mix
1 8 ounce package softened cream cheese
1 cup milk
Coat a 9x13x2" baking dish with non stick cooking spray.
Combine the gelatin and boiling water and stir until the gelatin is dissolved. Add the mandarin oranges, pineapple and orange juice.
Pour into the dish and refrigerate until chilled and set, about 1 hour.
Beat together the vanilla pudding, cream cheese and milk. Spread over the gelatin. Refrigerate until chilled, at least 1/2 hour.
