8 fresh salmon fillets, 3/4" thick
3 Tbsp. olive oil
4-1/2 tsp. cornstarch
1-3/4 cups homemade chicken broth
3 Tbsp. balsamic vinegar
1 Tbsp. orange juice
1 Tbsp. brown sugar
Orange zest from whole orange
Freshly grounded black pepper
Orange slices for garnish
Preheat the oven to 350*F.
Place salmon in a 12x8x2" shallow baking dish. Sprinkle with black pepper and drizzle with oil. Bake for 15 minutes or until fish flakes easily when tested with a fork.
Stir the cornstarch, broth, vinegar, orange juice, brown sugar and orange peel into a 2 qt. saucepan over high heat. Heat the mixture to a boil. Cook and stir until mixture boils and thickens.
Place the salmon on a serving platter and serve with the sauce. Garnish with orange slices.
