Gluten free muffins

Gluten free apple muffins

1 egg
1/2 cup milk
1/4 cup oil
1/2 teaspoon salt
1/2 cup sugar

1/2 cup pumpkin-seed-flour
1 cup starch
2 teaspoons baking powder
1/2 teaspoon cinnamon

2 cooked and peeled potatoes, coarsely grated
1 apple, coarsely grated

Preheat oven to 400 Fahrenheit or 175 Celsius.
Line 12 muffin cups.

Mix first 5 ingredients in a mixing bowl.
Mix next 4 ingredients in a measuring cup and add to liquid mixture. Combine with a fork until mixed.
Grate next 2 ingredients onto mixture an combine.
Fill muffin cups 2/3 full. Bake for about 25 minutes.
Very fluffy!
