Golden Cheese And Rice

1/2 C. raw white rice
3 C. shredded raw carrots
2 C. shredded Cheddar
2 eggs, beaten
1/4 tsp. pepper
1 1/2 tsp. salt
2 T. minced onion
1/2 C. milk

Cook rice as directed, adding carrots during the last 5 minutes cooking time. Stir once.

Combine with remaining ingredients, reserving 1/2 C. cheese and place in a greased 1-1/2 qt. casserole and sprinkle remaining cheese on top
Bake at 325º for 50 minutes.
