Golden Chicken Nuggets w/ Honey Mustard Sauce

The batter will seem thin, but don’t worry . . . it creates a really light, crispy coating. These are easy and delicious . . .

Golden Chicken Nuggets w/ Honey Mustard Sauce

1 pound boneless skinless chicken breast
Vegetable Oil (I use Canola Oil)
1/3 C. flour
1/4 tsp. salt
1-1/2 tsp. vinegar
1/4 tsp. baking soda
1/3 C. water
Mustard Sauce (recipe follows)

Heat oil (2"-3" deep) in deep fryer or dutch oven to 360 degrees. Cut chicken into 1" x 1/2" pieces. Pat dry with paper towel. Mix vinegar and baking soda. Stir vinegar mixture and water into flour mixture, mixing until smooth. Dip chicken in batter and allow excess batter to drip back into bowl. Fry chicken ubtil golden brown and done, about 4 minutes. Drain. Serve with Honey Mustard Sauce.

Honey Mustard Sauce
In a saucepan, mix 1/4 cup honey with 1/4 cup yellow mustard. Cook over low-medium heat, stirring ocassionally, until thickened to desired consistency . . . sauce will turn an amber color (about 8-10 minutes). Serve with chicken nuggets.
