Got a Flatplate BBQ? - Great Potato Side Dish

Hi all

If you have a BBQ like mine with half griddle half flatplate then this is a great side dish.

You need:

New potatoes but in half
Cloves of garlic
Onion sliced so that it is on long stringy bits.
salt and pepper
Olive oil

Boil the spuds but don’t let them start to break down, drain for a few minutes. Crush the cloves of garlic into the spuds then drizzle with some olive oil.

Put it all on the flatplate of the barbecue until the potatoes go brown, this is where the flat edges of the cut potatoes are great as they pick up the lovely crispy edge.

When the spuds are nearly ready add the onion and fry all together on the hotplate - salt and pepper to taste.

It is important that the onions are added towards the end or they will burn and make it taste bitter.
