FOR THE PAST WEEK I HAVE BEEN MAKING DESSERTS LEFT RIGHT AND CENTER WITH GRAHAM CRUMBS. WHAT ELSE DO YOU USE IT FOR?

Graham Cracker Streusel Coffee Cake

Streusel:
Use one pkg graham crackers, (9 full ones)
1 cup brown sugar
1 stick and 3 Tbsps melted butter
1 1/2 cups pecans
2 tsps cinnamon

Put your graham crackers in a Ziploc bag, close it and roll with rolling pin until crushed, put in large bowl. Add other dry ingredients. Melt butter pour over and mix thoroughly. Set aside.

Cake:
1 box (18 1/4 oz) white cake or French vanilla cake mix
1 box of instants (3.12 oz) French vanilla pudding
3 eggs
1/4 cup oil
1 cup water

Beat together until thoroughly mixed. Pour half into a greased 13X9X2 baking pan. Sprinkle with half of the streusel mixture. Carefully spread the remaining batter on top of the streusel and then top with remaining streusel. If using an aluminum pan bake for 45 minutes at 350 degrees. If using a dark pan bake for 30-35 minutes at 350 degrees. I’ve tried this several different ways and it actually bakes better with less brown edges in the aluminum pan for a longer time. Insert toothpick for final test. This is the only coffee cake I’ve ever made that tastes as good the second day or freezes well and can be served when thawed. Of course you lose the smell that a hot coffee cake right out of the oven provides. I usually drizzle icing on top made from powered sugar and milk

Chocolate Raspberry Cheesecake

1 Chocolate Ready Crust from Keebler or make your own from chocolate graham crackers.

6 oz of cream cheese (softened)

1 can (14 oz.) of sweetened condensed milk (NOT evaporated milk)

1 egg

3 tablespoons lemon juice

1 teaspoon vanilla extract

1 Cup of fresh or frozen raspberries

**Chocolate glaze: In small sauce pan, over low heat, melt 2 oz. of semi sweet baking chocolate with ¼ cup of whipping cream. Cook and stir until thickened and smooth. Remove from heat.

Preheat oven to 350 degrees. With mixer, beat cream cheese until fluffy; gradually beat in sweetened condensed milk until smooth. Add egg, lemon juice and vanilla and mix well.

Arrange raspberries on the bottom of the crust. Slowly pour the cream cheese mixture over the fruit. Bake for 30 to 35 minutes or until center is almost set. Cool.

Top cheesecake with Chocolate Glaze; chill. Garnish as desired.

HAM BALLS FOR A PARTY

2 1/2 lb. ground ham
1 lb. lean pork
1 lb. ground beef
2 c. milk
3 c. ground graham crackers
3 eggs

Mix the meats together. Add milk, crackers and eggs. Work with hands. Roll in balls. Place in cakepans.

–SAUCE:–

Mix together and pour over ham balls:

2 cans tomato soup
2 c. brown sugar
Garlic salt
2/3 c. vinegar
Worcestershire sauce
1 tsp. dry mustard

Cook uncovered at 350 degrees for one hour. Reheat to serve in crockpot or chafing dish. Shared years ago by Evie Stubbs.

ALABAMA MEAT PIE

1 c. mild Cheddar cheese
1 c. meat (ham or sausage)
1/3 c. onion, chopped
1 (13 oz.) can evaporated milk
3 eggs, beaten
1 c. graham crackers crushed or cooked grits
1 tbsp. parsley
1/2 tsp. salt
1/4 tsp. dry mustard
1/8 tsp. cayenne pepper
9-inch pie shell

Brown meat and remove all grease; put cheese on bottom of pie shell. Put meat on top of cheese. Mix other ingredients and pour over the meat in the uncooked pie shell. Bake at 375 degrees for 45 to 50 minutes.
