GRANDMA’S RELISH
2 CUPS CHOPPED ONION
2 CUPS CHOPPED CABBAGE
2 CUPS GREEN TOMATOES
6 GREEN PEPPERS
3 SWEET RED PEPPERS
¼ CUP PICKLING SALT
3 CUPS SUGAR
1 TBSP MUSTARD SEED
¾ TSP TURMERIC
2 CUPS CIDER VINEGAR
1 CUP WATER
GREEN FOOD COLOURING (OPTIONAL)
GRIND VEGETABLES IN FOOD CHOPPER USING COARSE BLADE. SPRINKLE WITH SALT & ALLOW TO STAND OVERNIGHT.
IN MORNING, RINSE WELL WITH FRESH WATER & DRAIN THOROUGHLY.
COMBINE SUGAR, MUSTARD SEED, TURMERIC, VINEGAR & WATER IN A LARGE SAUCEPAN. HEAT UNTIL BOILING, ADD VEGETABLES & SIMMER 3 – 4 MINUTES. ADD GREEN FOOD COLOURING UNTIL DESIRED SHADE IS REACHED.
POUR INTO HOT STERILIZED JARS & SEAL IMMEDIATELY.
MAKES 4 - 1 PINT JARS.
