This is any easy way of making enchiladas with out all the extra work! Quick and Easy!
Cook whole chicken or use canned chicken. Shred into a large bowl. Add one large can of cream of chicken soup, one can of evaporated milk, one small onion, one can of chopped green chilies or chop some of your own roasted chilies. one cup of grated cheese. And one dozen corn tortillas chopped up into bite size pieces. Mix altogether and put into cassorole dish put more grated cheese on top. Cook uncovered until hot and bubbly and cheese is melted.
