Green Tomato Chocolate Cake
2/3 cup butter, softened
1 3/4 cups granulated sugar
4 oz unsweetened baking chocolate, melted
2 eggs
1 teaspoon vanilla extract
1/2 cup unsweetened cocoa powder
2 1/2 cups sifted all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1/4 teaspoon salt
1 cup beer
1 cup pureed green tomatoes
1/4 to 1/2 cup water, if needed.
Preheat oven to 350 degrees F.
Beat together the butter and sugar.
Stir in melted chocolate, then the eggs,
one at a time. Add vanilla.
In another bowl, sift together the cocoa,
flour, baking powder, baking soda and salt.
Add sifted dry ingredients to the creamed
ingredients alternately with the beer and
green tomato puree. If the batter appears
too stiff, add the water (moisture content
of green tomatoes can vary).
Turn batter into greased and floured 13 x 9
inch baking pan and bake for 35 minutes.
Frost, if desired, or serve plain. This is
a very rich and moist cake. Makes 16 servings.
