GRILLED BEEF FAJITAS
2 Vidalia onions, thickly sliced
2 yellow squash, sliced lengthwise
Salt and pepper to taste
8 oz. lean beef
1/2 cup salsa
4 x 8-inch tortillas
Brush grill with olive oil and preheat.
When hot, grill onion slices until soft and browned.
Brush squash slices lightly with oil. Salt them, and grill until soft. Season steaks with salt and pepper and grill until cooked through. Remove from grill and slice into strips.
To assemble fajitas, put 2 Tbs. salsa on each tortilla, top with onions, squash slices and beef. Roll and eat.
