This dish is delicious even though it sounds odd.

Grouper Foster

Vanilla Beurre Blanc

1/2 cup white wine
1/2 cup coconut milk
1/2 teaspoon finely chopped shallots
1 vanilla bean split with pulp exposed 5 oz unsalted butter

Heat wine & shallots. Add coconut milk and vanilla bean. Cook until the liquid has reduced by 3/4. Remove vanilla bean & squeeze pulp into reduction. Take off heat & wisk in butter 1 tablespoon at a time to form a light emulsion.

Bananas Foster Topping

2 medium bananas
1 tablespoon lemon juice
1 teaspoon brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon rum extract

Slice bananas and set aside. Heat remaining ingrediants until carmelized. Add bananas.


4 grouper fillets
1 cup flour
2 egg whites
1/2 cup coconut milk
1 cup japanese bread crumbs
Clarified butter

Beat eggs and milk together. Season fish with salt & pepper. . Dip fish in flour, then milk mixture, then bread crumbs. Saute in clarified butter until golden brown on each side.

To serve:

Serve fish over the Vanilla Bean Beurre Blanc sauce and top with small amount of Bananas Foster.
