AKRA
Akra is a beloved Haitian appetizer that has won the hearts of people from all over the world. These savory, fried fritters are a staple in Haitian cuisine and are often served as a popular street food or a delicious starter at home.
While they may not be on every menu, you’ll find them in most Haitian restaurants because of their incredible popularity. The taste is absolutely amazing, and you’ll find it hard to stop at just one.
The recipe is simple to adjust, so feel free to experiment with the flavors. You can add more or less of the spices to suit your own taste. This recipe yields a serving size that fills an 8"x10" aluminum pan. Enjoy!
Ingredients for approximately 6-8 servings:

approximately 2 lbs. malanga (taro root)

1/4 cup finely chopped parsley or 1/4 teaspoon powdered parsley

2-3 cloves of garlic or 1/4 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon adobo seasoning

1/4 teaspoon black pepper

1/4 teaspoon sour orange juice (optional)

1/4 teaspoon lemon pepper powder (optional)

1 tablespoon all-purpose flour

3 cups, preferred olive oil, for frying
1. Unpeeled taro root (malanga)
- Peel and wash the malanga carefully.
3 Using your favorite food processor with a grating shredder/slicer
4. Shred the malanga into a large bowl.
5. Add a small amount of you’re the following in either powder form or liquid
6. Garlic, Salt. Parsley, Lemon Pepper (optional), Adobo Seasoning, Sour Orange (optional), Regular Pepper
7. Spices included, mix/ stir accordingly
8. Add flour (keeps the malanga from breaking apart) and mix
9. Using your hands or a large spoon, shape the mixture into small, cylindrical shaped pieces. Try and keep them closely the same size for even cooking.
10. Place each individual piece in the oil until you notice brown coloring
11. Fry the akra for about 5-7 minutes
12. Using tongs flip them over, then continue frying for an additional 3-5 minutes

14. Once it’s nice and brown remove
15. Strain
