**RED POTATO SALAD**
While the exact origins of red potato salad are debated, this version is a beloved favorite in Haitian and West Indian communities, known for its rich and flavorful twist on the classic dish.
This recipe will show you how to make a creamy and flavorful Haitian-style red potato salad, perfect for a single bowl. The key is the beet, which gives the salad its signature red hue.
Ingredients for a large bowl size

2 large red or regular potato

1 small beet

2 hard-boiled egg

2 large carrot

½ cup mayonnaise

2 tablespoon butter or a splash of Half and Half creamer

1. Place the potato, beet, egg, and carrot in a pot of boiling water. Cook until all are tender.
2. Once cooled, peel the potato, beet, egg, and carrot.
3. In a bowl, mash the potato until smooth. Dice the carrot and beet, and mash the hard-boiled egg.
4. Add the mashed potato, diced carrots, diced beet, and mashed egg to a bowl. Mix in the mayonnaise, butter (or creamer), and a pinch of salt and pepper. Stir well until all ingredients are evenly combined and the salad is a uniform color.
