This recipe will show you how to make a creamy and flavorful Haitian-style red potato salad, perfect for a single bowl. The key is the beet, which gives the salad its signature red hue.

Ingredients for a large bowl size

  • 2 large red or regular potato

  • 1 small beet

  • 2 hard-boiled egg

  • 2 large carrot

  • ½ cup mayonnaise

  • 2 tablespoon butter or a splash of Half and Half creamer

  • Salt and black pepper to taste

1. Place the potato, beet, egg, and carrot in a pot of boiling water. Cook until all are tender.

2. Once cooled, peel the potato, beet, egg, and carrot.
