HALUSKI

2 Tbsps. butter or vegetable oil
1 med. onion, chopped
1 lg. clove garlic, minced
1/2 lg. head cabbage, sliced (6-8 cups)
3/4 tsp. caraway seeds
1/2 tsp. salt
1/4 tsp. pepper
3/4 lb. egg noodles, medium or wide
1/2 cup sour cream or yogurt
1/2 cup shredded Cheddar or Monterey Jack cheese

In a deep skillet or dutch oven large enough to hold all the cabbage heat the butter or oil over medium heat. Add the onion, garlic, cabbage, caraway seeds, salt, and pepper and stir to combine. Partially cover and reduce heat to low. Cook, stirring occasionally, for about 15 minutes. The cabbage should be softened, but still retain some of its green color.

Meanwhile, cook the egg noodles according to package directions and drain.

Off the Stove, combine the cabbage mixture with the noodles. Add the sour cream or yogurt and the shredded cheese. Stir until the cheese has melted and the ingredients are well combined. Serve immediately.

This dish goes well with smoked sausage or kielbasa.
