Ham Roll Ups

2 cups mashed sweetpotatoes
3 tbsp melted fat
1/2 cup crushed pineapple
1/4 cup chopped pecans
1/2 cup cracker crumbs
3 tbsp brown sugar
6 slices, 1/8-inch thick, smoked or boiled ham
3/4 cup pineapple juice

Combine potatoes, fat, pineapple, pecans, cracker crumbs and brown sugar; mix well. Spread filling on each slice of ham, roll as for jelly roll, fasten with toothpicks or tie.

Place in baking dish, add pineapple juice and bake in moderate oven (350) for 1 hour for smoked ham and 20 minutes for boiled ham. Baste frequently.

Serves 6.
