Hamburger Helper Chinese Vegetable Soup


1-lb. lean Ground Beef, Pork or Turkey
1 package Rice Oriental Hamburger Helper Mix
2 cans Beef Broth
6 cups Hot Water
1 Tbsp. + 1Tsp. Soy Sauce
1/2 tsp. ground Ginger
1/2 tsp. Salt
1/8 tsp. Pepper
1/2 cup diagonally sliced Green Onions, with tops
2 Tbsp. dry Sherry Wine

Brown ground meat and drain well. Return meat to pot. Add Rice, sauce mix, water, beef broth, soy sauce, ginger, salt and pepper. Heat to boiling, stirring constantly, reduce heat. Cover and simmer, stirring occasionally, 20 minutes. Stir in green onions and dry sherry wine. Heat until bubbly. Let stand, covered, 15 minutes before serving.

Yield: 8+ cups of soup
