I’m a big fan of apple turnovers, so I really dig this recipe.
Pastry and Filling
1 package puff pastry sheets
4 large cooking apples
1/2 cup sugar
1 Tbsp cornstarch
1 tsp lemon juice
1/4 tsp ground cinnamon
Sugar Drizzle
1/2 cup confectioners sugar
1 Tbsp water
Pastry and Filling
Peel, core and slice the apples. In a saucepan over low heat, cook the apples with the sugar, cornstarch, lemon juice and cinnamon, stirring frequently, until the apples become tender.Refrigerate until cool.
Thaw the pastry sheets at room temperature for approximately 20 minutes. Preheat your oven to 400F. Unfold the pastry on lightly floured surface. Roll each sheet into a 12 inch square then cut into four 6 inch squares. Place 1/4 cup apple mixture in center of each square. Brush the edges with water. Fold to form triangles, then seal the edges firmly with a fork.
Place on 2 baking sheets. Bake 25 minutes or until golden. Cool on wire rack.
Sugar Drizzle
In small bowl, mix together the confectioners sugar and water. With a spoon, drizzle on the apple turnovers, allow to set before serving.
