Healthier Version of Cream of (Whatever) Soup

Healthier Version of Cream of (Whatever) Soup Mix

2 cups powdered nonfat milk
3/4 cup cornstarch
1/4 cup instant chicken bouillion
1/2 tsp pepper
2 Tbsp dried onion flakes
1 tsp basil leaves
1 tsp thyme

Mix all together, blending well and store in an airtight container. Makes equivalent of 9 “cans” of soup.

To use: Combine 1/3 cup of mix with 1 1/4 cups of cold water in a medium sauce pan. Use whatever vegetables (celery, mushroom, tomato, etc.) you like to make your favorite soup. Can add meat if desired. Is lower in fat and salt than regular canned versions. To further lower sodium content, omit bouillion in mix and replace with low sodium chicken stock when actually making soup. Can substitute 2 teaspoons of Mrs Dash seasoning for the basil and thyme. You can make cream of anythng (shrimp, chicken, beef, etc) soup with this recipe.
