We like this most any time because it is so good and tasty.
1 (16-oz) box lasagna noodles
1 lb. Italian sausage, casings removed
1 small onion, minces
4 cloves garlic, minced
2 lb. ricotta cheese
2 cups shredded mozzarella cheese
1/4 cup shredded Parmesan cheese
2 large eggs, beaten
1 Tbsp. dried basil, crushed
1 (48-oz.) jar pasta sauce
1 medium tomato
Preheat oven to 350 degrees.
Cook noodles as per package directions, drain and rinse with cool water, drain again. Crumble sausage add to the skillet with the onion cook and stir until browned, drain fat. Stir in the garlic remove from the heat.
In a large bowl mix ricotta, mozzarella, Parmesan, eggs and dried basil until well blended.
spread a thin layer of sauce in 13X9-in. baking dish, top with layer of noodles cover with a layer of cheese mixture, sprinkle with some sausage. Add layer of sauce. Repeat layering, top with a layer of noodles and sauce top with sliced ripe tomatoes.
Cover with foil, bake for 45 minutes. Uncover and bake until bubbly about 15 minutes. Let stand 5 minutes before serving.
