Herbed Grilled Pizza

MAKES 4 SERVINGS

Ingredients:

Homemade pizza dough OR precooked pizza rounds (10 inches in diameter)
Olive oil for coating
2 red our yellow bell peppers
1 cup tomato sauce
1/4 lb sliced prosciutto, cut into fine shreds
1/4 lb goat cheese
2 Tbsp chopped basil
Salt and pepper

Prepare a charcoal or gas grill for indirect cooking over high heat and oil the grill rack.

Brush both sides of dough rounds with olive oil. Place rounds of dough on unheated portion of the grill. Cook, turning once, until grill-marked and cooked through, 5-8 minutes on each side. Transfer to work surface.

Grill bell peppers directly over heat, turning to char and blister on all sides, 5-7 minutes. Transfer to paper bag, close and cool for 10 minutes. Peel and remove seeds and stems. Chop and set aside.

Spread half of the tomato sauce on each pizza round. top each round with half of the bell peppers and half of the prosciutto. Dot each pizza with half of the goat cheese and sprinkel with half of the basil. Sprinkle with salt and pepper to taste and drizzle a little olive oil on top. Place pizzas on UNHEATED portion of the grill, cover and bake until toppings are thoroughly heated through, about 10 minutes. Serve.
