Herbed Tomato Salad

(4 servings)

1/4 cup olive oil
3 Tbsp fresh lemon juice
3/4 tsp salt
Freshly ground pepper to taste
1 Tbsp chopped onion
1/2 garlic clove, minced
1 tsp paprika
1 tsp chopped mint
3 large ripe tomatoes, sliced

Combine oil, lemon juice, salt, pepper, onion, garlic, paprika and mint. Beat with a fork and refrigerate for 30 minutes. Pour the dressing over the tomatoes and serve.

Aline this is was wonderfull! I enhanced it with 2 shredded basil leaves and some crumbled blue cheese ( I imagine fresh shredded parmesan would have been good also ) Thanks!
