Homemade Deviled Ham

I tried this recipe yesterday. Wow! This is so much better than the stuff in the can. It would make a good appetizer on crackers for a party.

Ingredients

1 pound (about 3 cups diced) smoked ham, cut into 1-inch cubes**
1/2 cup mayonnaise
1/4 cup prepared yellow mustard (like French’s)
1/2 cup chopped yellow onion (or 1/4 cup dried onions)
1 Tablespoon dill or sweet pickle relish
2 tablespoons chopped fresh parsley leaves (or dried)
3 tablespoons maple syrup (or dark corn syrup)
2 tablespoons hot sauce (or to taste - recommended: Tabasco)
1 tablespoon Worcestershire sauce
2 teaspoons paprika (smoked paprika if the ham is not smoked)**
1 teaspoon plain mustard powder (like Coleman’s)
Black Pepper to taste

Directions

Combine all ingredients in a food processor and blend until smooth.

Use as a sandwich filling or spread on crackers for a snack.

**If you don’t have smoked ham, you can add smoked paprika or a little liquid hickory smoke.

Makes about 3 cups.

Mock Deviled Ham

My Mother made this when cash was short and she wanted to make a nice luncheon treat.

1-2 lb Chunk of Deli Bologna
2 small onions
2-3 Hard Boiled Eggs
2/3 cup Sweet Pickle Relish
1/3 cup chopped Green Bell Pepper
2 Tbls Durkee’s Famouse Dressing or
3 tbls Yellow Mustard or to taste

Cut Bologna into chunks that fit into hopper of meat grinder or shred larger chunks on hand grater. Grate or dice onions very fine and do the same with eggs. Add Pickle Relish and mix well. Add Miricle Whip and Durkees or mustard and mix to creamy consistancy. Chill well and serve with good crackers or as sandwiches
