Homemade Vegetable Soup H.J.'s
1960 I created this I was 16 and married-n taught myself how to
cook over the years.
Large pot . . add everything :
1 lb. stewing meat. . .cut up in bite size pieces or use 7 Bone meat
brown alittle in the pot
1 and half large yellow onion…chop
add water to cover as not to burn
2 large carrots…chop
Basil …dried dash over the top of the pot very lightly
1/2 to 3/4 head of cabbage…sliced up
1/4 cup of pearl barley
1/4 cup tomato juice. . . Campbells
1qt. jar of fresh caned tomatoes or 1 - 28 oz. large can of tomatoes
3 to 4 bay leaves whole… …remove after cooking
1 can of lima beans …drained
1 can of Veg -All …drained…some potatoes are in there already
Some fresh corn off the cob or 1 small can …drained
Peas small can …drained
Salt and pepper to your taste.
Add water to the top bring to boil and turn down to simmer for hours
or alll day as I do.
The last hour of cooking
Add about a large handful of wide noodles
Optional at the last 1/2 hour of cooking
1 yellow squash…cut thin
2 Italian squash …cut thin
This is a meal in itself on any day of the week,especially WINTER
Can freeze in pint containers or hower you like H.J.
